Ingredients
  

  • 13 lb/5.9 Kg Fresh Whole Turkey
  • 4 tbsp salted butter

Instructions
 

  • Heat oven to 400 degrees F/205 C
  • Remove giblets and innards from inside the Turkey and set aside to make stock if you wish. Wash the Turkey and wipe dry with paper towels. Rub most of the soft butter all over the skin of the turkey on all sides. Rub a little bit of butter in the cavity. Tuck wings back. Tie legs together with twine.
  • Place a rack on a baking tray. Set turkey breast side down on the rack and place in heated oven. Cook for approximately 1 hour and 30 minutes until a probe inserted into the thigh reads 160 Fahrenheit. Remove baking tray from oven. Using heat proof gloves, turn the turkey over so the breast is facing up. Place tray back in the oven and cook for approximately one hour under a probe inserted into the breast reads 160 Fahrenheit and thigh is 180 Fahrenheit. Cover turkey loosely with foil and let turkey rest 15 minutes before carving. Serve with gravy.
  • ** If raw turkey is very cold, use melted butter instead of soft butter as soft butter will solidify on top of turkey skin and be difficult to spread.
