Boil water in a large pot to cook pasta. Once water is at a full boil, add 1 tbsp coarse salt. Add pasta, stir and cook until tender.
While pasta is cooking, zest the lemons and juice them. Grate the garlic. Chop parsley if using.
One minute before pasta is finished cooking, heat up a pan. Add 4 tbsp olive oil, lemon zest, grated garlic and chili flakes. Cook 20 seconds on low heat until garlic sizzles, don't let it turn color. Add lemon juice, 1/4 tsp salt. Take pasta directly from cooking pot and add to pan. Stir well and add more salt if necessary. Add chopped parsley and grated parmesan, if using. If pasta is too dry, add some of the pasta cooking liquid. Serve hot.
Made the lemon pasta dish for company and they loved it….I added a half cup of white wine to the recipe! Was a big hit… thanks!
Glad everyone liked it 🙂
I made this tonight with linguini–delicious! Next time I’ll saute some shrimp and add. Thanks for this recipe.
