Chapati/Roti Dough
Instructions
Add salt and oil to flour and mix. Heat up 8 ounces/235 ml of water. Water should be hot, does not need to boil. Add water slowly to flour while mixing with your hands or using the dough hook in a stand mixer. Do not add all of the water at once. After adding half the water, keep mixing and add more water little at a time until dough comes together nicely without being too wet. You will need at least 6oz/3/4 cup water. Knead for five minutes by hand or using the dough hook of a KitchenAid stand mixer (speed 2).
Dough should be soft. Form dough into a disc and rub a little oil all over it. Place in a bowl and cover with a towel or plastic wrap. Set aside for 20 minutes. Dough is ready to use in making chapatis and rotis.
