Ingredients
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 1/2 tsp sugar
- 1/4 tsp Coarse Salt
- 1/8 tsp Ground Black Pepper
- 1/2 tsp dried oregano
- mortadella 16 slices
- boiled ham 16 slices
- calebrese salami 16 slices
- pepperoni 16 slices
- provolone cheese 8 slices
- 1/2 head iceberg lettuce shredded
- 1 medium tomato thinly sliced
- pepperoncini sliced
- 1 small Yellow Onion thinly sliced
- 4 Italian sub rolls

Instructions
- Leave thinly sliced yellow onion in cold water for about 10 minutes. Drain and pat dry. To a bowl, add red wine vinegar, olive oil, sugar, salt, ground black pepper and dried oregano. Whisk this and that’s it for the simple dressing. You can substitute white vinegar, apple cider vinegar and a vegetable or canola oil for the dressing. Slice your rolls in half lengthwise. Spoon the dressing on the inside top and bottom. Layer the ingredients, start with mortadella, salami, boiled ham and pepperoni, provolone cheese, sliced onion, shredded lettuce, pour a little dressing over the lettuce, sliced tomato (cut it in half if it’s loo large, plum tomatoes are the perfect size for this sandwich because they are smaller and you don’t have to cut them in half). Top with pepperoncini if you’re using it.
- Add more meat and cheese according to your preference. Substitute any Italian meat for others in this recipe. Capicola is a good addition. Virginia ham can be substituted for boiled ham.
