  1. Process chicken in food processor until minced or buy ground chicken
  2. In a bowl, put ginger garlic paste, green chiles, chopped onion, cilantro, tomato, scallions, ground chicken, all spices and mix well with your hands.
  3. Cover bowl and marinate in the fridge for at least one hour. Heat up a griddle, add a little oil and put a teaspoon of the mixture to cook. When cooked, taste and add more salt to the bowl if you need to.
  4. Make 3 or 4 oz patties with the marinated meat. Heat up a griddle and add a little oil. Cook patties on both sides until golden brown.
  5. Serve with ketchup or green chutney. I like to marinate thinly sliced red onion with chopped cilantro, lemon juice and salt while the kebabs are cooking. Serve this tangy onion on the side of the kebabs.
Recipe Notes

You may freeze any leftover meat mixture in a zip bag in the freezer. Thaw the night before in the fridge and they are ready to cook.
