Instructions
  1. Heat your oven to 425 degrees Fahrenheit or 218 degrees Celsius
  2. Peel potatoes and cut into wedges. Toss the potatoes with 1 tsp ground black pepper, 1 tsp salt and 1 tablespoon olive oil. Put the potatoes on a baking sheet in a single layer.
  3. Cut off the top of 1 head of garlic and place in a piece of foil. Drizzle a little olive oil on top and rub all over. Cover it up and put it on the same baking sheet.
  4. Roast the potatoes for 25 minutes and turn over the pieces. Roast another 20-25 minutes or until golden brown.
  5. Open the foil packet and look at that garlic, it’s soft and a beautiful amber color. Squeeze out the garlic cloves into a bowl. Remove any of the peel that may have fallen in. Mash the soft garlic into a paste.
  6. Melt 2 tablespoons butter in a saucepan. Add the mashed garlic and stir into the butter. Add 2 tbsps chopped parsley and stir.
  7. Spoon the garlic sauce over the potatoes and toss to coat evenly.
